Cactus Pear, also known as prickly pear, is an elongated, egg-shaped fruit of several varieties of Opuntia cactus. The prickly skin of the Cactus Pear can be purple-red or sometimes green. The skin is peeled and the inside is a soft, ruby-red or golden colored flesh with tiny, edible seeds. The cactus pear has a flowery aroma, juicy texture like a watermelon and most often the flavor is similar to a sweet melon. The pear cactus can tolerate a wide range of temperature and moisture levels, but it grows best in sunny desert like conditions. It can grow in the United States, Mexico, and South America. It also flourishes in Africa, Australia, and the Mediterranean. Like most cactus plants, the prickly pear cactus has long, sharp spines and it can grow up to 7 feet (2.1 m) tall. In cooking the fruit is best when it is made into candy, jelly, juice, or wine. It is also available dried, in extract form, it can be eaten raw, served cold and in fruit salads.
